Seafood Tonkotsu Tsukemen / Kokura Castle and our seafood tonkotsu tsukemen

7 minutes from Kokura Station. Enjoy seafood tonkotsu tsukemen served piping hot in a clay pot, creamy chicken ramen, and flavor-packed mixed noodles and brothless ramen.

What makes our tsukemen special

  • Flat, high-hydration noodles

Flat noodles with a high water content — smooth and chewy, and they pick up plenty of the rich dipping soup.

  • Double broth

Pork and whole chicken simmered slowly, combined with the umami of dried sardines, mackerel and bonito.

  • Hot to the last bite

The dipping soup comes in a clay pot, so it stays hot until you finish.

How to Enjoy Each Dish

The same guide you’ll find on our tables. Choose a dish:

Seafood Tonkotsu Tsukemen

  1. Take your photo within 20 seconds — it’s best hot!
  2. First, try a few noodles on their own to taste the noodles themselves.
  3. Dip the noodles into the piping-hot soup in the clay pot and enjoy the rich flavor.
  4. Change up the taste with the kelp vinegar or black pepper on the table.
  5. We recommend adding rice or “Oi-meshi” to the rich soup to make a porridge (zosui).
  6. After the noodles, ask for “soup-wari” — we thin the remaining soup with broth so you can drink it to the last drop.

※For soup-wari, just ask a staff member.

Creamy Chicken Ramen

  1. Take your photo within 20 seconds — it’s best hot!
  2. First, take a sip of the soup with the spoon and enjoy its deep, creamy richness.
  3. Slurp the medium-thin noodles made from Japanese wheat and enjoy the wheat aroma.
  4. Change up the taste with the kelp vinegar, black pepper or chili powder on the table.
  5. To finish, add rice or “Oi-meshi” to the soup and enjoy it as a porridge (zosui).

Egg-Topped Noodles (TKM)

  1. Take a nice photo first.
  2. Mix the “Mangetsu” egg in the center and the noodles vigorously, from the bottom up.
  3. Once well mixed, grab a big chopstickful and slurp it all in one go.
  4. Change up the taste with lemon, kelp vinegar or black pepper.
  5. To finish, put rice or “Oi-meshi” into the leftover sauce for a bowl of egg-over-rice.

Mixed Noodles

  1. Take a nice photo — shooting from directly above works best.
  2. Mix well from the bottom until the egg yolk coats everything. The spoon makes mixing easier.
  3. Once well mixed, dig in!
  4. Add a little kelp vinegar from the table for a milder taste (don’t add too much).
  5. To finish, put rice or “Oi-meshi” into the leftover sauce.

Brothless Ramen

  1. Take a nice photo — shooting from directly above works best.
  2. Add chili oil and vinegar to taste and mix well. We recommend about two circles of each while the noodles are hot.
  3. Once well mixed, dig in!
  4. To finish, put rice or “Oi-meshi” into the leftover sauce.

Rice and Oi-meshi can be ordered and paid for in cash from your seat — just ask a staff member.
